Rice with Dill, baby Lima Beans, and Lamb (Shod Palaw)
Rice is a stable food for all Afghans and is cooked in a variety of ways. This version is loaded with dill and baby lima beans that makes for a calcium and fiber rich dish. I added some lamb for protein and topped it with a hint of saffron for a pop of color. This is a simple and delicious one-pot meal.
